Coming Parent's Weekend
This is it you guys your last Parent's weekend. I am feeling a little sad. We have really taken advantage of the sights and restaurants around town. It's like a mini vacation for us. We have found a really nice B & B ( which we will stay at for graduation). We do the whole history tour.
Crock Pot Monday

Chicken with Bacon Swiss, and Mushrooms
3 slices of bacon
6 boneless, skinless chicken breasts halved ( I used 3)
4/5-oz jar sliced mushrooms drained
10 3/4-oz. can cream of chicken soup
1/2 cup shredded Swiss cheese
1. In a large non-skillet, cook bacon until crisp. drain well, reserving drippings. Crumble bacon.
2. Cook 3 chicken breasts in bacon drippings over medium heat for 3 to 5 minutes or until brown, turning once. Place chicken in crock pot. repeat with remaining 3 breasts. Top with mushrooms.
3. Heat soup in skillet until creamy. Pour over mushrooms and chicken.
4. Cover and cook on high 1 hour and then on low 2 hours or until chicken is tender.
5. Top chicken with shredded Swiss cheese. Sprinkle with bacon.
6. Cover and cook on high 10 to 15 minutes more or until cheese melts. Serve over brown rice and asparagus.

Crockpot Monday

Melt-In Your-Mouth Sausages
serves 6-8
2 lbs. sweet Italian sausage, cut into 5-inch lengths
1-48 oz. jar spaghetti sauce
1-6 oz. jar tomato paste
1 large green pepper thinly sliced
1 large onion thinly sliced
1-Tbsp. grated Parmesan cheese
1 tsp. dried parsley, or 1 Tbsp. chopped fresh parsley
1 cup water
1. Place sausage in skillet. Cover with water. Simmer 10 minutes. Drain.
2. Combine remaining ingredients in slow cooker. add sausage.
3. Cover. Cook on Low for 6 hours.
4. Serve in buns, or cut sausage into bite-sized pieces and serve over cooked spaghetti. Sprinkle with additional Parmesan cheese.

Crockpot Monday
Creamy Chicken Italiano makes 4 servings
4 boneless chicken breasts
0.7oz envelope dry Italian salad dressing mix
1/4 cup water
8- oz. cream cheese softened
10 3/4 oz. can cream of mushroom soup
4-oz. can mushrooms stems and pieces drained
1. Place chicken in slow cooker.
2. Combine salad dressing mix and water. Pour over chicken.
3. Cover and cook on high 1 hour and then on low for 1 hour.
4. Combine cream cheese and soup in a bowl until blended. Stir in mushrooms. Pour over chicken.
5. cover and cook on low 1 hour more or until chicken juices run clear.
6. Serve over noodles.
